I grew up in a small village in the mid-west of Sweden and began working in the village hotel as a teenager. This hotel / restaurant was run by the internationally recognised and award winning chef Gert Kl?tske. Alas, my interest for cooking was awoken.
My economic studies led me through a good few years within the banking and financial industry before I in 1990 ventured out to sea and my first crossing on the, then big, Sailing Yacht Suakin.
After ten years on the water I stepped ashore and worked as a fleet manager for five years before starting my own company in Graphic Design and returned to play with the pots and pans on a freelance basis before returning to the yachts full time in 2009 for a good few years.
Since 2013 I am back ashore and although graphic design is what i love to do today my interest for the culinary is still there.
When cooking my aim was to creating sumptuous menus and fine cuisine?for owners? and guests? satisfaction to whatever their choice of cuisine might have been. My personal preference is to cook an uncomplicated yet refined cuisine using fresh produce whenever available, cooked to combine the ingredients to complement each other with the emphasise on Colour – Texture ? Taste and with an attention to detail.
After my years in yachting I have learned that no matter how well you plan things, things will always change. Produce you thought you would have is not available or have perished, the yacht?s itinerary change and you are cruising for longer or shorter than expected, fridges and freezers are not always reliable, the generator?s power may be prioritised for other needs that the galley?s and yet again you need as a chef take breath, or two, and find a way to produce some excellent food for guest and crew.
